Blue Apron's Provencal Chicken and Potato Stew
Meal #12:
Years ago Di got this recipe from Blue Apron and raved about it. Since then, we've made Blue Apron's Provencal Chicken and Potato Stew many times. It's especially good on a cold winter's evening, like tonight.
The prep definitely took longer than I remembered...cutting up chicken and potatoes mincing garlic (I forgo the paste step) as well as prepping the Swiss Chard. Nevertheless, the cook time was quick (about 15 minutes once the boiling point was reached). The result was a hearty, tasty and satisfying stew even without preparing the garlic toast or aioli. I simply served it over rice with semolina bread.
