Skinnytaste's Curry Roasted Vegetables and Chickpeas with Chrissy Teigen's Sweet and Salty Coconut Rice

Tonight I made Curry Roasted Vegetables and Chickpeas with a Cilantro Chutney from Skinnytaste One and Done and Chrissy Teigen's Sweet and Salty Coconut Rice from Cravings. The curried vegetables and the coconut rice paired nicely together.
Curry Roasted Vegetables with Cilantro Chutney
I love Gina Homolka's https://www.skinnytaste.com/ website as well as all of her cookbooks. This recipe appears in One and Done. I make this recipe about every two weeks because it's delicious, healthy and we usually have all the ingredients in the house (carrots, cauliflower, chickpeas, garlic, cilantro and an onion). Since we like bold flavors I always double the amount of spices (curry, turmeric, cumin and garam masala) in her recipe excluding salt.
We've also found that this recipe needs the chutney or some lime juice otherwise it's just eats too dry. I made my own chutney based off hers that pairs nicely with the vegetables:

I love Chrissy Teigen's recipes almost as much as I love skinnytaste....quite a paradox in that Gina is all about points and watching fats and carbs and Chrissy is the polar opposite. What they do have in common and why I love them both is that their recipes work and their food tastes not just good but REALLY, REALLY GOOD!
This coconut rice recipe from Cravings is really good. As a rule, I try to cut the sugar in a recipe by 1/3 to 1/2 and did so with this one using about 1/8 of the recommended 1/4 cup of sugar but did not counter it with a reduction in the salt adding the full 1 1/2 teaspoons....hence I think it was a tad too salty. However the luscious coconut flavor came through nicely in the creamy rice. Next time I believe it will be amazing using the 1/8 Cup sugar and 3/4 teaspoon of salt.
Three out of four family members enjoyed dinner....Lizzie is still in her picky phase and only ate the rice insisting the vegetables were "too spicy." Her dinner was supplemented with some leftover chicken.

- 2 Tablespoons fresh lime juice
- 1/4 teaspoon salt
Directions:
Mix all the ingredients together and serve over the roasted vegetables.
