Let's Do Organic's Coconutty Granola
Meal #5:
We love unsweetened coconut and granola! So when I saw a recipe for Coconutty Granola on the back of the Let's Do Organic Unsweetened Coconut Flakes I knew we had to try it.
This is the third time we've made the granola and I think this was the best batch yet. The first time we added dried cherries and after being baked for almost an hour, they just tasted off. This time (and last) we omitted the dried fruit and added Trader Joe's Raw Slivered Almonds and it was fantastic!
The best part was that Lizzie pretty much made this recipe on her own. She measured the oats, flour, cinnamon, nuts and coconut and poured them all in the largest bowl we have (it makes spillage when she stirs less likely). I was in charge of the wet ingredients (maple syrup, vanilla and sunflower oil). Lizzie whisked together the wet ingredients in the measuring cup and then stirred the dry ingredients. She combined them and I gave the granola a few more stirs for quality control purposes 😀. I spread the mixture over a parchment paper lined baking sheet and the granola was done in about 50 minutes.
My favorite part of the granola aside from the amazing maple aroma the fills the kitchen for hours is the crisp coconut flakes....they're just like chips. For this reason, next time I think we will up the measurement to 1 cup.

3 cups Rolled oats
1/4 cup Whole wheat flour
1 cup Let’s Do…Organic® Shredded Coconut On the package, it states 3/4 cup flakes
1/2 cup Let’s Do…Organic® Coconut Flakes
1/2 tsp Cinnamon We always double the cinnamon
1/3 cupCanola or safflower or sunflower oil
1/2 cup Maple syrup We use a little more than 1/3 cup to cut down on sugar.
1 tsp. Vanilla (optional) Never an option!
1/4 cup Whole wheat flour

- Preheat oven to 300ºF.
- Mix dry ingredients in a large bowl.
- In a separate bowl, blend all wet ingredients.
- Add wet ingredients to dry ingredients and stir until well mixed.
- Spread on oiled cookie sheet and bake for about 1 hour until golden brown.
- Let cool.
- Serve with milk – dairy or non-dairy
