Maggie Austin's Apple Bread (Again)

It's only Tuesday and we still have quite a few pounds of apples in the refrigerator. Will there be a third apple loaf baked this week???
This morning Lizzie and I made Maggie Austin's Apple Bread again simply because we finished the loaf we made Sunday, wanted more and had the apples in the house.
This loaf looked and tasted better than Sunday's. Some reasons for this may include:
- Lizzie helped. She's the best baker in the house!
- I followed the directions to a T (except for the fact that I reduced the sugar to 1/4 cup plus 1 Tablespoon). This meant that we whisked all the ingredients together first and then incorporated the flour followed by the apples. Last time, I put the baking soda and powder in with the flour which could have altered the bread's appearance.
- The loaf cooked for about 55 minutes, which made it nice and tender inside with a lightly crisp top.
